The Differences Between Semi-Washed, Fully Washed, and Natural Process

Have you ever wondered why one cup of coffee can taste sweet and tangy like berries, while another tastes cleaner and more pronounced? The answer lies not only in the coffee variety or where it is grown, but also in the post-harvest process—the way coffee cherries are processed before becoming green beans ready for roasting.

There are three commonly used coffee processing methods: fully washed, semi-washed, and natural process. Let’s get to know these three methods first! 

Fully Washed

Fully washed, also known as the wet process, begins by sorting the coffee cherries through water immersion. Cherries that float are usually less mature and are removed, while those that sink are processed further.

The outer skin is then removed using a pulper, leaving the beans covered in mucilage. The beans are fermented in water for around 1–2 days. Fermentation is one of the key stages of this process, as it helps break down and remove the mucilage surrounding the beans. Once the fermentation is complete, the beans are thoroughly washed before being dried.

As a result, fully washed coffee tends to have a smooth, clean, and well-defined flavor profile, with a more uniform physical appearance compared to other processing methods. The characteristics of the coffee variety and its origin can also be more clearly expressed in the cup.

Semi-Washed

Semi-washed is a processing method closely associated with Indonesia and is commonly known as “wet-hulling”. 

Unlike the fully washed process, semi-washed coffee goes through two drying stages. First, the outer skin of the coffee cherry is removed using a depulper. The beans, still covered with mucilage, are then partially dried without being fully washed until their moisture content reaches approximately 30–35%. The mucilage that dries and remains attached to the beans is one of the key characteristics of this process.

Afterward, the parchment layer is removed, revealing the green beans, which are then dried for a second time until they reach a moisture content of around 10–12%.

This two-stage process and the longer exposure during processing can create a coffee with a heavier body, more diverse flavors, and earthy characteristics. These qualities are often associated with Indonesian coffees, including coffee from Toraja, giving them a distinctive character that is easy to recognize.

Natural Process

The natural process, also known as the dry process, is one of the oldest methods of processing coffee.

After being sorted and cleaned, the coffee cherries are dried whole, without removing their outer skin or fruit flesh. During the drying process, the beans remain in contact with the fruit for an extended period. Once the cherries have dried sufficiently, the outer layers are removed to reveal the coffee beans.

Because of the prolonged contact between the beans and the fruit during drying, natural process coffees often develop a sweet flavor, fuller body, and strong fruity notes. This method is perfect for those who enjoy a unique, complex, and fruit-forward coffee profile.

Ultimately, each processing method gives coffee its own distinct character. Fully washed coffee highlights a clean cup profile and the coffee’s origin, semi washed coffee offers a fuller body with earthy notes, while natural process coffee delivers a sweeter and fruitier profile.
