Ever had coffee from the same beans but it tasted completely different at two different cafés? It’s probably not the beans. it’s the roast level. Think of roasting as the “kitchen” behind your coffee’s flavor. The roast level chosen determines whether your cup turns out bright and fruity, sweetly caramel-like, or bitter.
What is Roasting?
Coffee roasting is basically the process of heating raw green coffee beans until they turn from green to brown. Unroasted beans taste super bitter if you try to brew them straight up, roasting is what unlocks all the aroma and flavor hiding inside the bean. The longer the beans are roasted, the stronger the roasting process itself shapes the flavor and the fainter the bean’s original character becomes. The process can be stopped at different points, which is exactly why we end up with three main roast levels : light, medium, and dark.

Light Roast
Light roast is the lightest of the bunch. Beans are pulled from the roaster shortly after “first crack” – the point where they start popping like popcorn. The beans stay pale brown since they haven’t absorbed much heat yet, no oily sheen on the surface, and they feel dry to the touch.
Characteristics of light roast :
- More noticeable acidity : bright and lively.
- Fruity and floral notes really shine through.
- Light body with a clean finish.

Medium Roast
Medium roast sits right in the middle. It goes one step further than light roast, giving the sugars inside the bean a bit more time to caramelize. The beans darken slightly while the surface remains mostly dry, as only a small amount of oil appears.
Characteristics of medium roast :
- A nice balance of acidity, sweetness, and a touch of bitterness.
- Richer, more pronounced aroma than light roast.
- Fuller body with a smoother mouthfeel.
This is the go-to level for pretty much everything such as manual brew, espresso blends – because it just hits that sweet spot.
Dark Roast
Dark roast is the darkest roast level. The roasting process continues beyond the second crack, producing beans that are dark brown to almost black in color with a much bolder flavor profile. The longer roasting time also brings the beans natural oils to the surface, giving them their signature glossy look.
Characteristics of dark roast :
- Low acidity, with bitterness taking the lead.
- Bold aroma with smoky, roasty undertones.
- Full body and a long-lasting finish.
Dark roast pairs exceptionally well with milk-based drinks such as cappuccino, latte, and flat white, as its bold flavor remains distinct even when combined with milk.
