Luwak coffee was first discovered in the early 18th century, when the Dutch opened coffee plantations in Java and Sumatra. Because of those plantations, the Dutch then implemented a forced cultivation system, as well as prohibiting the workers to pick coffee berries for their own personal consumption. However, the workers then discovered a type of civet that likes to eat coffee berries, where only the flesh of said fruit are digested by them, while the skin and coffee beans are still intact. This can happen because civets or luwaks, like to look for fruits as their consumption. Because of their sharp sense of smell, those civets will pick coffee cherries that are ripe to consume, which then the said fruit flesh will be digested by them, while the coffee beans are protected by a layer of skin that will later come out, along with the civets feces.
